London’s iconic restaurants The Wolseley and Colbert are stepping into the hospitality world in a new way. Minor Hotels, in partnership with the Wolseley Hospitality Group, has announced plans to launch four hotel brands inspired by the well-known dining spots.
At the core of this expansion is a focus on food-driven travel. The Colbert Collection is set to open in the Middle East, although the exact city and launch date are still under wraps. The brand aims to appeal to guests who seek authentic, neighbourhood-style experiences, with the restaurant itself forming the heart of the hotel.

The Colbert restaurant, originally based in London’s Sloane Square, is inspired by Parisian boulevard cafés and is known for its all-day dining, from breakfast to dinner. The hotel version will carry the same informal, local atmosphere into the hospitality space.
Meanwhile, The Wolseley Hotels brand will draw on the heritage of its Piccadilly restaurant — bringing together British charm, European style, and global touches. The aim is to reimagine the elegance and personality of these landmark eateries in a hotel setting.

Minor Hotels, which currently operates over 560 properties across 57 countries, has set its sights on 850 hotels worldwide by 2027. The move marks another step in expanding its global footprint and tapping into travellers looking for destination-led, experience-first stays.
