You arrive at Jumeirah Al Qasr and step onto an abra that moves through the waterways. By the time you reach the restaurant, the usual rush of deciding what to eat is already out of the picture. There’s no menu waiting at the table. Instead, you’re asked what you enjoy and how far you’re willing to go outside your usual choices.

From there, the kitchen takes over. The chefs build a dish around what you’ve shared, creating something that isn’t listed or repeated. The food draws from regional Indian recipes but each plate is one of a kind.
